Newari people are those who are the inhabitants of Kathmandu Valley mainly. They are considered as one of the group of people who are very rich in traditions , religions, cultures ad festivals. In every festivals and linked with traditions, Newari cuisine are also the favorite one in Nepal. If someone calls a name “Newar”, there hits a term “Newari food/cusine” in the brains. In Kathmandu valley especially we can found hundreds of Newari restaurants and hotels which serves Newari cuisine/Food. Newah or Newar are the indigenous people living in Kathmandu valley. The language of Newars is Newari. They have multiple ethnicity, race (Mongolian, Aryan, Austro-Dravidian) and faith within the community united by same language . Haku chhoyal (grilled spiced meat), fokso (goat lungs) fry , Jibrao (goat tounge) fry, Nhyapu (goat brain) fry, Bhutan ( intestine, giblets etc.) fry, Tahakhala ( special jellied meat), Sanya khuna (special jellied meat with fish) as well as bara, chatamari, aaloo tama.
Some of the important Newari Cuisines are described below:
Sanyakhuna (Meat Jelly with Fish):
Sanyakhuna is a Jellied meat soup with fish .It is closely related to takha(Meat Jelly). Buffalo meat and bones are cooked separately for about three to four hours in a large cauldron. To the warm broth, a little bit of dried fish, hing and a large amount of red chillies are added. Later it is allowed to settle into a pudding to set jelly. It can only be made during the cold season as it need to freeze well.
Juju Dhau:
Juju Dhau is very popular food product in Nepal. It is the speciality of town of Bhaktapur. Juju dhau means the “King Yogurt”. Juju Dhau is rich in taste with thick creamy consistency. A must try for food lovers.
Chatamari is one of the most popular newari food. It is a kind of very thin pancake or crepe usually made from rice flour. It can be topped with variety of topping specially minced red meat and egg or vegetables and seasoned with vegetables like tomatoes,onions,green chilies etc.
Yomari (Sweet Dumpling Style Dish)
Yomari is the special dish of Newars. It is the Newari sweet dish that is best served hot. Yomari is prepared by filling the dumpling of rice flour which is shaped in the form of fig with mixture of molasses and sesame seeds. The filling mixture can be substituted by lentil paste or milk solids called Khuwa.
Bara:
Bara is a traditional Newari snack which is more like a pancake made of black lentil. It is healthy as well as hygienic food and is one of the popular foods in Nepal . Many small or big restaurants specializing in Newari food offer tasty Baras at reasonable prices. It is golden brown in color and could also be made by mixing other ingredients like meat and egg in it which are known as Masu-Bara and Anda-Bara, respectively. However, Bara is a vegetarian dish unless mixed with egg or meat.
